Little Mermaid Inspired Cupcakes

These adorable Little Mermaid cupcakes are perfect for a Little Mermaid Family movie night or an under the sea mermaid party! I love this recipe because it uses a simple boxed cake mix, regular buttercream icing, and small fondant accents.

Little Mermaid Inspired Cupcakes

These cupcakes are so easy to make. After going to the Americas Cake Fair last year I got a new appreciation for fondant, especially flavored ones. If you don’t like the taste of regular fondant you can either make marshmallow fondant or use purple candy melts for the seashells.

If you love life under the sea and Ariel is your spirit princess then these Ariel inspired cupcakes are perfect for you! They are simple to make and kids can help make the fondant shells. 

Ingredients

  • 12 of your favorite chocolate cupcakes 
  • 1 stick of butter, softened
  • 2 cups confectioners’ sugar
  • 1 tsp vanilla extract
  • 1 drop green gel food coloring
  • 1 drop blue gel food coloring
  • 1 cup purple fondant
  • Cornstarch
  • Seashell molds for fondant

Directions

Prepare cupcakes and let them completely cool before frosting.

Using an electric mixer, start mixing butter, confectioners’ sugar, vanilla and both food colorings on medium speed. These ingredients will make up your buttercream frosting. Gradually increase the mixing speed to high and mix until completely smooth and tinted with your aqua blue/green color. Start off with a small amount of coloring at first and if you want the color a darker color add one more drop of both colors at a time.

Using a piping bag, frost each cupcake.

Line a baking sheet with wax paper. Sprinkle your seashell mold with cornstarch and place a piece of fondant in the cavity.

Ease the fondant into the mold with your fingers and then pop it out. Place each one on your lined baking sheet until you have made 24 of them.

Place 2 seashells on each cupcake. Serve and enjoy!
